Making sense of Coffee labels

When you first step into the world of coffee roasting, one of the biggest challenges is decoding all those labels. They tell you about flavor, quality, and how the coffee was grown. Here’s a simple guide to help you understand the ones you’ll see most often.

Processing Methods

Washed Process (Wet-Processed)

In the washed method, the fruit is removed before drying. This creates a clean, bright cup with crisp acidity and distinct origin flavors. Expect notes of citrus, flowers, and tea-like sweetness.

Best for: Coffee drinkers who love clarity, brightness, and a strong sense of place in their cup.

Natural Process (Dry-Processed)

Naturals are dried inside the whole cherry, allowing the beans to absorb sugars and fruity flavors. This produces bold, fruit-forward, full-bodied coffee, often with berry or wine-like notes.

Best for: Those who enjoy adventurous, fruit-heavy, and richer-bodied brews.

Honey Process

Here, the skin is removed but sticky fruit mucilage remains during drying. This technique balances the sweetness of naturals with the crispness of washed coffees. Expect smooth, sweet, and lightly fruity cups.

Best for: Drinkers who want complexity and balance—a middle ground between clean and fruity.


Certifications & Ethical Sourcing

  • Organic Coffee
    Grown without synthetic fertilizers or pesticides, supporting more sustainable and environmentally friendly farming practices.
  • Fair Trade Coffee
    Guarantees farmers receive minimum pricing and fair labor conditions, while strengthening communities and encouraging ethical trade.
  • Direct Trade Coffee
    Focuses on roasters working directly with farmers, ensuring higher quality, transparency, and better pay for growers.

Elevation & Grading

  • SHG / SHB (Strictly High Grown / Strictly Hard Bean)
    Refers to coffee grown above 1,200m (about 4,000 ft). Higher altitude means denser beans and more complex flavor profiles.
  • Bean Grades (AA, AB, PB)
    These vary by country. For example:
    • AA often means larger beans.
    • PB (Peaberry) is a rare, naturally occurring mutation that produces a single, round bean with unique flavor characteristics.
